Combine strawberries, icing sugar and balsamic vinegar in a bowl and stand for 30 to 40 minutes.
Place almonds, dates, coconut and cocoa powder in a food processor and blitz until it resembles course breadcrumbs.
To serve, layer strawberries, Connoisseur Classic Vanilla Ice Cream and mixture of almonds, dates etc. in a serving glass. Repeat with remaining serving glasses.
